Indian tonight…Aloo Gobi..oh my, fabulous flavor!

Aloo Gobi

This brings together about a dozen spices from Garam masala to ginger, turmeric, and cayenne.  Cardamom, coriander, cumin and cinnamon.  …the list goes on.  All blended together with sautéed onions, garlic, golden potatoes, cauliflower, tomatoes and chick peas….you know how I love chickpeas! The flavors are fantastic.  Serve over basmati rice or have on its own. YUM!  And, you’ll definitely have people saying ‘what smells so good!?’ when they walk in your house.

Fall Vegetable Sweet Potato Chickpea Curry

The combination of flavors in this is fantastic.  Indian flare of curry, coconut yogurt dollop, cilantro, brought together with fall vegetables sweet potato and chickpeas, YUM.

This smells and tastes SO good.  You could serve it with naan or over cous cous if you wanted to, I had it as is and Wow.

Garlic Chickpea Soup from My Sis Jeannine!

My sister shared this recipe!  SO much of what she makes, comes straight from walks in her garden with her little guys.  Btw..she has an upper level AND a lower level garden!!  I aspire to this….

I was babysitting for a couple for a bit, 3 mos old and 18 mos old-2 girls.  I would cup the 3 mos old in my palms, fingers laced together, arms straight down with her facing out to kinda make a swing.  We would chase her 18 mos old sister this way and the 2 of them would literally crack up, out loud!  It was the most hilarious thing, for all 3 of us!!

This is how I picture my sister sometimes, because of all the funny stories she shares about her boys and their daily happenings.

The little things and their never ceasing to make you stop in your tracks by the voicing of one sentence, or what makes them all of a sudden fall on the ground cracking up!  One in particular, her son plopping down in the garden and eating the cabbage from where it grew!  This cracked me up picturing him….Ohhh to never lose are child-like amazement!

Firecracker Vegetable and Chickpea Roast

Ok, so this is OUT OF THIS WORLD.  Like super star.  Boys and girls!  This will be one that you will be looking forward to lunch time coming at the office so you can dig in all over again!

The Indian flavors of curry and mint, with Italian herbs jacked up with jalapeno….whoa! Unless you prefer milder food, leave the seeds in the jalapeno so the dish befits its name.

If you are going light on the carbs it is amazing with out the bed of rice as well.

Garbanzo Stew

Ok, when you need something fast, wonderful on the palette and soothing, this is easy to make, GREAT to have around for being on the run, taking to work,  where ever you might want it.  Make double or triple batches and freeze individual portions to grab and microwave at the office or freeze family meal sizes for those days you can’t scrape together 15 mins to cook.

This seemed too easy to be SO good!

Back from Down Under..Chickpeas are the Best! …who woulda thought?..

I got back from New Zealand, with a lot of catch up work…catching up with everything that was not part of our work in NZ(btw – Hello Ros, Johnson & Malcolm! fyi: we are under blizzard warnings right now here in Alaska!..Missing NZ summer!!!)

So no recipes or posts over the last 2 weeks, Now I have so much to share!

Have a look at this recipe! It’s fast and easy….and WONDERFUL!!! Especially if you are used to southern cooking that involves bacon….WHAT??!!..Bacon is not Vegan!
