Much work remains to be done.  The health care establishment is structured to profit from chemical and surgical intervention.  Diet still takes the back seat to drugs and surgery.  One criticism that is constantly leveled at the dietary argument is that patients will not make such a fundamental changes.  This criticism is not only wrong and insulting to patients; it is also self-fulfilling.  If doctors do not believe that patients will change their diets, they will neglect to talk about diet, or will do it in an off-handed, under emphasized or even disparaging way.  There is no greater disrespect a doctor can show patients than that of withholding potentially lifesaving information based on the assumption that patients do not want to change their lifestyle.

Well-meaning institutions are not exempt from such ways.  The American Heart Association recommends a diet for heart disease that favors moderation, rather than scientific truth.  The National Cholesterol Education Plan does the same thing.  These organizations pitch moderate diets with trivial changes as being healthy lifestyle “goals”.  If you are at high risk for heart disease, or if you already have heart disease, they recommend that you adopt a diet containing 30% of total calories as fat and less than 200mg/day of dietary cholesterol.  According to them, we should also keep our total blood cholesterol level under the “desirable” level of 200mg/dL.  Though we are told this, we know that 35% of heart attacks strike Americans who have cholesterol levels between 150 and 200 mg/dL (a truly safe level is under 150 dL)

We also know that the most aggressive reversal of heart disease ever demonstrated occurred when fat was about 10% of total calorie intake.  Many patients who follow the more moderate government recommended diets see a progression of heart disease.  The innocent victims are health-conscious Americans who follow these recommendations, keeping their total cholesterol around 180-190 mg/dL, only to be rewarded with a heart attack leading to a premature death…”

Filets de Poisson a la Bretonne

“Fish Fillets” Poached in White Wine with a Julienne of Vegetables

You may notice I replaced the fish fillets with lengthwise slices of baked potato for this Vegan version of Filets de Poisson a la Bretonne!  Poaching these vegetables and fillets in a baking dish of White Wine, vegan butter and seasoning, then bringing it up under the broiler for a touch of browning, crisping…Mmmmmm!  Enjoy ;)

The Future

Just a personal note on this one, an amazing piece to me is how many times I hear that eating healthy is expensive….hmmmmm….

“…The future is filled with hope.  We now know enough to nearly eliminate heart disease.  We know not only how to prevent the disease but how to successfully treat it.  We do not need to crack open our breast plates to reroute our arteries, and we do not need a lifetime of powerful drugs in our blood.  By eating the right food, we can keep our hearts healthy.

The next step is to implement this dietary approach on a large scale, which is exactly what Dr. Dean Ornish is currently working on.  His research group has begun the Multicenter Lifestyle Demonstration Project, which represents the future of heart disease health care.  Teams of health professionals at 8 diverse sites have been trained to treat heart disease patients with Dr Ornish’s lifestyle intervention program.  Patients eligible to participate are those who have documented heart disease severe enough to warrant surgery.

The results are phenomenal.  After 1 year of treatment, 65% of patients had eliminated their chest pain.  The effect was long lasting as well.  After 3 years, over 60% of the patients continued reporting no chest pain.

The health benefits are equaled by the economic benefits.  Over 1 million heart disease surgeries are under taken every year.  In 2002, physician services  and hospital care for heart disease patients cost $78.1 billion (that does not include drug costs, home health care or nursing home care).  At this time the angioplasty procedure alone cost $31,000 and by-pass surgery cost $46,000.  In marked contrast, the year-long lifestyle intervention program only cost $7000….”

Dr. Dean Ornish

“…Another giant in this field, Dr. Dean Ornish, has been instrumental in bringing diet to the forefront of medical thought.  A graduate of Harvard Medical School, he has been featured prominently in popular media, succeeded in having his heart disease treatment plan covered by a number of insurance carriers and written several best-selling books.

His best known research is the Lifestyle Heart Trail, in which he treated 28 heart disease patients with lifestyle changes alone.  He put these patients on an experimental treatment plan and 20 additional patients on the standard treatment plan.  He followed both groups carefully and measured several health indicators, including artery blockages, cholesterol levels and weight.

Dr. Ornish’s treatment plan was very different from the standards of high-tech modern medicine.  He put the 28 patients in a hotel for the first week of treatment with explicit instructions.  He asked them to eat a low-fat, plant-based diet for at least a year.  Only about 10% of their calories could come from fat.  They could eat as much food as they wanted, as long as it was on the acceptable food list, which included fruits, vegetables and grains.  As researchers noted, “no animal products were allowed except egg white and one cup per day of non-fat milk or yogurt.  In addition to diet, they were to practice various forms of stress management, including meditation, breathing and relaxation exercises for at least 1 hour/day.  The patients were also asked to exercise 3 hours per week at levels appropriate to the severity of their disease.  To help the patients, the group met 2x per week for mutual support.  Dr Ornish and his research group did not use any drugs, surgery or technology to treat these patients.

The experimental patients adhered to pretty much everything that the researchers asked of them and were rewarded with renewed health and vitality.  After 1 year, the frequency, duration and severity of chest pain plummeted.  Further, it was clear that the closer the patients adhered to the lifestyle recommendations, the more their hearts healed.

The control group did not fare so well, despite the fact that they received the usual modern medicine care.  Their chest pain became worse in terms of frequency, duration and severity.  Although the experimental group experienced a 91% reduction in the frequency of chest pain, the control group experienced a 165% rise in the frequency of chest pain.  Their cholesterol levels were significantly worse than those of the experimental patients, and their blockages also became worse.

Between Dr.Esselstyn, Dr, Ornish and others before them, we have found our strategic link in our heart disease battle.  Their dietary treatments not only relieve the symptoms of chest pain, but they also treat the cause of heart disease and can eliminate future coronary events.  There are no surgical or chemical heart disease treatments, at the Cleveland Clinic or anywhere else, that can compare to these impressive results…”

Brains for Dinner Tonight…?

Does that sound as foul to you as it does to me??  Lol I think we’ve definitely got the better deal being Plant Based here.

With Cauliflower coming into season, I had to share this post I’d done that is downright FABULOUS to the taste-buds! ….A cauliflower head makes a fantastic Brain!!…(better actually)…sounds crazy, I know..seriously, in this recipe it’s true.

It shocked me…you’ll be licking your fingers.

Julia Child’s Braised “Brains” in White Wine Vegetable Saute, Browned Mushroom Sauce in a Ring of Cous Cous…..literally Whoa…!

It looks really neat on the plate too.  I cut the prepared cauliflower head into 4, place each in the center of a plate with the White Wine Vegetable Saute poured over the top as well as the Browned Mushroom Sauce, surrounded in a ring of Cous Cous.  The presentation was really beautiful.

…Anyone for a lobe?…lol

This was inspired by a recipe I saw on CookingLight.

TheHealthyFlavor and I had the same sentiments after the fantastic flavor and simplicity of the easy Pasta Arribbiata

I wanted….what can I say but MORE..with a different flare.  I stumbled upon this, plant based-modified it a bit, along with a couple of ingredients that sounded good to me and WOW….

Former president Bill Clinton turns 66: ‘A vegan diet saved my life’

Former U.S. president Bill Clinton celebrated his 66th birthday on Aug. 19, 2012, and is leaner and healthier than ever, thanks to a vegan diet.

Clinton switched to a plant-based diet in 2011 and lost 24 pounds several months later. The previous year, he had two stents placed in his coronary artery after having undergone a quadruple heart-bypass surgery in 2004.

Bill, who has a family history of heart disease and struggled with weight for years, credited his new diet for saving his life.

“I was lucky I did not die of a heart attack [in 2004],” Clinton told CNN. After his first surgery, the former president cut back on calories and reduced his dietary cholesterol intake but continued to eat the hamburgers, steaks, chicken enchiladas, barbecue and french fries he so loved.

“When I had my second heart incident [in 2010] and I had the stents put in, I had passed all my physicals, I was doing great, but I was still building up plaque in my arteries,” he recounted. “So I decided that I wanted to see if I could live to be a grandfather, so I just went all the way.

“Now, I try to eat some salmon once a week, but I don’t miss any of that. Getting rid of the dairy was great, getting rid of the meat was — I just don’t miss it. Not everybody is as vulnerable to [heart disease] as I am.

“All of us produce a certain amount of enzymes that destroys our own bad cholesterol. However much extra we produce determines how much we can ingest. And unfortunately, we can’t measure it. So I just said, ‘I don’t want to take any chances,’ and I feel great.”

The former president says he really enjoys what he eats now, and doesn’t miss the fast food at all. “I like the vegetables, the fruits, the beans, the stuff I eat now,” said Clinton, whose weight hovers at around 185 pounds — his weight at age 13!

“All my blood tests are good, and my vital signs are good, and I feel good. I also have more energy.”

Clinton’s veganism has inspired other celebrities to embrace a vegan diet, including actress Michelle Pfeiffer and MSNBC host Rev. Al Sharpton, who has lost almost 50 pounds since 2010.

While he’s thrilled with his weight loss, Bill’s health-consciousness is primarily motivated by a desire to live to see his future grandchildren.
